- 1 package cheese-filled tortellini (fresh, frozen, or shelf-stable)
- 1 egg (or aquafaba for vegan option)
- 1/3 cup grated parmesan or nutritional yeast
- 1/2 cup panko breadcrumbs
- Olive oil spray
- Optional: garlic powder, Italian herbs, chili flakes
Instructions
- Boil tortellini if using dry or shelf-stable (2–3 mins). Drain and pat dry.
- In one bowl, beat egg. In another, mix breadcrumbs, parmesan, and seasonings.
- Dip tortellini in egg, then coat in breadcrumb mix.
- Preheat air fryer to 375°F (190°C).
- Spray air fryer basket, add coated tortellini in a single layer.
- Air fry for 8–10 mins, flipping halfway and spraying again for crispness.
- Serve hot with marinara, pesto, or yogurt dip.
