Ingredients
4 cod filets
2 cups cherry tomatoes, halved
1 cup mixed olives (green and black)
1/4 cup Calabrian peppers, sliced
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon fresh thyme
Salt and pepper to taste
1 lemon, sliced
Instructions
Preheat the oven to 400°F (200°C).
Arrange cod filets in a baking dish.
Scatter cherry tomatoes, olives, and Calabrian peppers around the cod.
Drizzle with olive oil, add garlic, and season with oregano, thyme, salt, and pepper.
Add lemon slices on top.
Bake for 15-20 minutes until cod is flaky and vegetables are tender.
Garnish with fresh herbs and serve hot.
