Ingredients
3 medium zucchini
4 large tomatoes (or 500g cherry tomatoes)
200g young gouda cheese, grated
2 cloves garlic, minced
2 tbsp olive oil
1 tsp oregano
1 tsp dried basil
Salt and pepper to taste
Optional: fresh parsley for garnish
Instructions
Preheat oven to 200Β°C (390Β°F).
Slice zucchini and tomatoes. Salt zucchini, let rest 15 min, then pat dry.
SautΓ© garlic in olive oil, toss with tomatoes and herbs.
In a baking dish, layer zucchini, then tomato mixture, and sprinkle with gouda cheese.
Repeat the layers and finish with cheese on top.
Bake for 30β35 minutes until golden and bubbly.
Rest for 5 minutes before serving.
