- 1 large sweet onion (Vidalia or Walla Walla)
- 1½ cups all-purpose flour
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- 1 cup milk
- 1 large egg
- ½ cup mayonnaise
- 2 tbsp ketchup
- 2 tsp horseradish
- ¼ tsp paprika
- ¼ tsp garlic powder
- Salt and pepper to taste
Instructions
- Cut the Onion: Slice ½ inch off the top, leave root intact. Cut into 12–16 wedges without cutting through the root. Soak in ice water for 30 minutes.
- Prepare Batters: Mix dry ingredients in one bowl; whisk milk and egg in another.
- Batter the Onion: Shake water off the onion, coat in dry mix, dip in wet mix, then dredge again in dry.
- Fry: Heat oil to 375°F (190°C). Fry onion root-side up for 6–8 minutes until golden.
- Drain and Serve: Let drain on paper towels and serve warm with dipping sauce.
