½ teaspoon salt

½ cup unsalted butter, cubed (or dairy-free option)

¼ cup cold water

1 egg, beaten (for egg wash – can use milk for vegan)

Instructions

Make Filling: Cook blueberries, sugar, and lemon zest. Stir in cornstarch to thicken. Cool.

Prepare Dough: Mix flour, salt, and butter. Add water, form dough, and chill.
