Instructions
1️⃣ Marinate the Chicken: In a bowl, mix buttermilk, salt, pepper, garlic powder, and cayenne. Add chicken, cover, and marinate for at least 1 hour (or overnight for best flavor).
2️⃣ Prepare the Breading: In a separate bowl, combine flour, cornstarch, paprika, onion powder, baking powder, salt, and pepper.
3️⃣ Coat the Chicken: Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge in the flour mixture, pressing firmly to coat well. Let rest for 10 minutes.
4️⃣ Fry to Perfection: Heat oil to 350°F (175°C). Fry each piece for 5-6 minutes per side until golden brown and cooked through (internal temp of 165°F or 75°C). Drain on paper towels.
