Ingredients

  • 4 bone-in, skin-on chicken thighs (or chicken breasts)
  • 4 medium potatoes, peeled and cubed
  • 1 large onion, sliced
  • 2 carrots, chopped (optional)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • ½ cup chicken broth
  • ¼ cup heavy cream (or plant-based cream alternative)
  • Chopped fresh parsley (for garnish, optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with salt, pepper, garlic powder, and paprika.
  3. Toss potatoes, onion, and carrots in olive oil, oregano, and seasoning in a baking dish.
  4. Place chicken over vegetables.
  5. Mix broth, cream, and garlic, then pour over everything.
  6. Cover with foil and bake for 35 minutes.
  7. Uncover and bake another 20–25 minutes until golden and chicken is fully cooked (165°F/74°C).
  8. Broil 2–3 minutes if desired for extra crispness.
  9. Garnish and serve warm.
