- 1 lb ground chicken (preferably a mix of white and dark meat)
- 1/2 small onion, finely grated
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 2 tablespoons fresh cilantro, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/4 cup breadcrumbs or almond flour (for gluten-free option)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground chicken, onion, garlic, parsley, cilantro, spices, breadcrumbs, olive oil, salt, and pepper.
- Wet your hands and form the mixture around skewers into sausage-like shapes.
- Refrigerate shaped kebabs for 15–30 minutes to help them firm up.
- Grill over medium-high heat for about 10–12 minutes, turning occasionally.
- Alternatively, bake at 400°F (200°C) for 18–20 minutes, flipping once halfway through, or pan-fry until golden and cooked through.
- Serve hot with pita, salads, dips, and lemon wedges.
