  • 1 lb ground chicken (preferably a mix of white and dark meat)
  • 1/2 small onion, finely grated
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 cup breadcrumbs or almond flour (for gluten-free option)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground chicken, onion, garlic, parsley, cilantro, spices, breadcrumbs, olive oil, salt, and pepper.
  2. Wet your hands and form the mixture around skewers into sausage-like shapes.
  3. Refrigerate shaped kebabs for 15–30 minutes to help them firm up.
  4. Grill over medium-high heat for about 10–12 minutes, turning occasionally.
  5. Alternatively, bake at 400°F (200°C) for 18–20 minutes, flipping once halfway through, or pan-fry until golden and cooked through.
  6. Serve hot with pita, salads, dips, and lemon wedges.
