Ingredients
500g chicken breasts or thighs
2 tbsp olive oil
1 tbsp paprika
1 tsp cumin
1 tsp garlic powder
1 tsp chili powder
1/2 tsp oregano
Salt & pepper to taste
Juice of 1 lime
Corn or flour tortillas
Fresh toppings (lettuce, diced tomatoes, onion, cilantro, avocado or guacamole, salsa)
Lime wedges for serving
Instructions
Marinate: Mix olive oil, spices, lime juice, salt, and pepper. Coat the chicken and marinate for at least 30 minutes.
Cook:
Grill for 6–7 mins per side, or
Pan-sear until golden, or
Bake at 200°C (400°F) for 20-25 mins.
Slice or Shred: Let the chicken rest, then slice or shred.
Warm Tortillas: Heat tortillas in a dry pan until soft and warm.
Assemble: Fill tortillas with chicken, fresh toppings, salsa, guacamole, and a squeeze of lime.
