- 1 cup full-fat or low-fat cottage cheese
- 2 cloves garlic (sautéed or roasted)
- ¼ cup grated Parmesan cheese
- ½ cup milk (or unsweetened plant-based alternative)
- Salt and pepper to taste
- 8 oz cooked pasta of your choice (fettuccine, penne, or gluten-free)
- Optional: fresh herbs (parsley, basil), lemon zest, sautéed veggies, or grilled protein (chicken, shrimp)
Instructions
- Boil your pasta in salted water until al dente. Drain and set aside.
- In a blender, combine cottage cheese, garlic, Parmesan, and milk. Blend until smooth and creamy.
- Pour the sauce into a saucepan and warm gently over low heat for 2–3 minutes. Do not boil.
- Toss with the cooked pasta until evenly coated.
- Garnish with herbs, extra Parmesan, or optional toppings.
