Ingredients

  • 1 cup full-fat or low-fat cottage cheese
  • 2 cloves garlic (sautéed or roasted)
  • ¼ cup grated Parmesan cheese
  • ½ cup milk (or unsweetened plant-based alternative)
  • Salt and pepper to taste
  • 8 oz cooked pasta of your choice (fettuccine, penne, or gluten-free)
  • Optional: fresh herbs (parsley, basil), lemon zest, sautéed veggies, or grilled protein (chicken, shrimp)

Instructions

  1. Boil your pasta in salted water until al dente. Drain and set aside.
  2. In a blender, combine cottage cheese, garlic, Parmesan, and milk. Blend until smooth and creamy.
  3. Pour the sauce into a saucepan and warm gently over low heat for 2–3 minutes. Do not boil.
  4. Toss with the cooked pasta until evenly coated.
  5. Garnish with herbs, extra Parmesan, or optional toppings.
