Ingredients

  • 1 cup full-fat cottage cheese
  • ¼ cup natural peanut butter (no sugar added)
  • 2 tbsp sweetener (honey, maple syrup, monk fruit, or allulose)
  • 1 tsp vanilla extract
  • ¼ tsp salt (optional)
  • 12 tbsp milk or almond milk (optional, for blending)
  • Toppings: fresh berries, banana slices, dark chocolate chips, crushed nuts, or granola (optional)

Instructions

  1. Add cottage cheese, peanut butter, sweetener, vanilla, and salt to a high-speed blender or food processor.
  2. Blend for 30–60 seconds until smooth and mousse-like.
  3. If too thick, add 1–2 tbsp milk and blend again.
  4. Refrigerate for 15–20 minutes for best texture.
  5. Serve in jars or bowls with toppings of choice.
