For the Choux Pastry Base:

  • 1 cup water
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs

For the Cream Filling:

  • 8 oz cream cheese, softened
  • 2 boxes instant vanilla pudding mix (3.4 oz each)
  • 2¾ cups cold milk
  • 1 tsp vanilla extract (optional)

For the Topping:

  • 1 tub whipped topping (or homemade stabilized whipped cream)
  • Chocolate syrup or caramel drizzle (optional)
  • Garnishes: shaved chocolate, fruit slices, crushed nuts (optional)

Instructions

  1. Make the choux pastry: Bring water and butter to a boil. Stir in flour and cook until a dough ball forms. Cool slightly, then beat in eggs one at a time until smooth.
  2. Spread into a greased 9×13-inch pan and bake at 400°F (200°C) for 25–30 minutes until golden. Let cool completely.
  3. Prepare the cream filling: Beat cream cheese until smooth. In a separate bowl, whisk pudding mix with milk until thick, then combine with cream cheese mixture.
  4. Spread the cream filling over the cooled pastry.
  5. Top with whipped topping, drizzle with syrup if desired, and add garnishes.
  6. Chill for at least 1–2 hours before serving.
