For the Choux Pastry Base:
- 1 cup water
- ½ cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
For the Cream Filling:
- 8 oz cream cheese, softened
- 2 boxes instant vanilla pudding mix (3.4 oz each)
- 2¾ cups cold milk
- 1 tsp vanilla extract (optional)
For the Topping:
- 1 tub whipped topping (or homemade stabilized whipped cream)
- Chocolate syrup or caramel drizzle (optional)
- Garnishes: shaved chocolate, fruit slices, crushed nuts (optional)
Instructions
- Make the choux pastry: Bring water and butter to a boil. Stir in flour and cook until a dough ball forms. Cool slightly, then beat in eggs one at a time until smooth.
- Spread into a greased 9×13-inch pan and bake at 400°F (200°C) for 25–30 minutes until golden. Let cool completely.
- Prepare the cream filling: Beat cream cheese until smooth. In a separate bowl, whisk pudding mix with milk until thick, then combine with cream cheese mixture.
- Spread the cream filling over the cooled pastry.
- Top with whipped topping, drizzle with syrup if desired, and add garnishes.
- Chill for at least 1–2 hours before serving.
