For the Pasta:
- 8 oz linguine, spaghetti, or penne
- Salted water for boiling
For the Salmon:
- 2 salmon fillets
- Salt and pepper
- 1 tbsp olive oil
- 1 tbsp butter
For the Garlic Butter Sauce:
- 3 tbsp butter
- 4 garlic cloves, minced
- Β½ cup chicken or vegetable broth
- 1 cup heavy cream (or dairy-free alternative)
- 1 tbsp lemon juice + 1 tsp lemon zest
- Β½ cup grated Parmesan (optional)
- 1 tsp Italian seasoning
- Salt and pepper, to taste
Instructions
- Boil pasta until al dente. Reserve Β½ cup pasta water, then drain.
- Sear salmon in butter and olive oil until just cooked. Set aside and flake.
- In the same pan, sautΓ© garlic, then deglaze with broth.
- Add cream, lemon juice, seasoning, and simmer until thickened.
- Add cooked pasta, a splash of pasta water, and toss to coat.
- Fold in salmon and top with herbs, cheese, and lemon zest before serving.
