Creamy Garlic Butter Salmon Pasta

For the Pasta:

  • 8 oz linguine, spaghetti, or penne
  • Salted water for boiling

For the Salmon:

  • 2 salmon fillets
  • Salt and pepper
  • 1 tbsp olive oil
  • 1 tbsp butter

For the Garlic Butter Sauce:

  • 3 tbsp butter
  • 4 garlic cloves, minced
  • Β½ cup chicken or vegetable broth
  • 1 cup heavy cream (or dairy-free alternative)
  • 1 tbsp lemon juice + 1 tsp lemon zest
  • Β½ cup grated Parmesan (optional)
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Boil pasta until al dente. Reserve Β½ cup pasta water, then drain.
  2. Sear salmon in butter and olive oil until just cooked. Set aside and flake.
  3. In the same pan, sautΓ© garlic, then deglaze with broth.
  4. Add cream, lemon juice, seasoning, and simmer until thickened.
  5. Add cooked pasta, a splash of pasta water, and toss to coat.
  6. Fold in salmon and top with herbs, cheese, and lemon zest before serving.
