Ingredients
Pasta: 12 oz penne pasta
Chicken: 1 lb chicken breast, cubed
Vegetables: 1 bunch asparagus (cut into 2-inch pieces), 8 oz mushrooms (sliced)
Sauce: 1 cup heavy cream, 1 cup chicken broth, 1 cup grated Parmesan cheese, 3 cloves garlic (minced)
Seasoning: 1 tsp Italian seasoning, salt, pepper, 1/4 tsp red pepper flakes
Garnish: Fresh parsley, grated Parmesan
Instructions
Cook Pasta: Boil penne until al dente. Reserve 1 cup pasta water, then drain.
Prepare Chicken: Season and sauté chicken until golden brown. Set aside.
Sauté Vegetables: Cook mushrooms and asparagus until tender.
Make Sauce: In the same pan, sauté garlic, add chicken broth, cream, Parmesan, and seasonings. Simmer until thickened.
Combine: Add chicken, vegetables, and pasta to the sauce. Toss to coat, adding reserved pasta water if needed.
Serve: Garnish with fresh parsley and extra Parmesan.
