Main Ingredients:
- 2 lb Yukon Gold or Russet potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- 1 tbsp Dijon mustard
- 2 tbsp lemon juice or apple cider vinegar
- 2 tbsp fresh herbs (parsley, dill, chives)
Optional Add-Ins:
- Sliced scallions or caramelized onions
- Roasted garlic cloves
- Capers or chopped olives
- Grilled chicken strips or roasted chickpeas
- Additional spices: chili flakes, cumin, sumac, or za’atar
Instructions
- Preheat oven to 425°F (220°C).
- Cut potatoes into cubes or wedges and toss with oil, garlic powder, paprika, salt, and pepper.
- Roast on a baking tray for 30–35 minutes, flipping halfway, until crispy and golden.
- In a bowl, whisk lemon juice, mustard, herbs, and seasoning to create the dressing.
- Let potatoes cool for 5–10 minutes, then toss with the dressing just before serving.
- Garnish with additional herbs or optional toppings, and serve warm or at room temperature.
