  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice or apple cider vinegar
  • 2 tbsp fresh herbs (parsley, dill, chives)

  • Roasted garlic cloves
  • Capers or chopped olives
  • Grilled chicken strips or roasted chickpeas

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Cut potatoes into cubes or wedges and toss with oil, garlic powder, paprika, salt, and pepper.
  3. Roast on a baking tray for 30–35 minutes, flipping halfway, until crispy and golden.
  4. In a bowl, whisk lemon juice, mustard, herbs, and seasoning to create the dressing.
  5. Let potatoes cool for 5–10 minutes, then toss with the dressing just before serving.
