  • 1 cup full-fat cottage cheese
  • 4 large eggs
  • ½ cup shredded cheese (cheddar or mozzarella)
  • ¼ cup chopped fresh parsley (or chives)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • 1 tbsp olive oil (for greasing)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish with olive oil.
  2. Grate zucchini and squeeze out excess water using a clean towel.
  3. In a large bowl, whisk together eggs, cottage cheese, shredded cheese, herbs, and seasonings.
  4. Stir in the zucchini and mix until well combined.
  5. Pour the mixture into the greased dish and smooth the top.
  6. Bake for 35–40 minutes, or until set and golden on top.
  7. Let cool for 10–15 minutes before slicing. Serve warm or chilled.
