Ingredients
3 large eggs, separated
1/2 cup smooth cottage cheese (low-fat or full-fat)
1/8 tsp cream of tartar
1/4 tsp salt (optional)
1/2 tsp vanilla extract or herbs (optional)
1 tbsp cornstarch or arrowroot powder (optional, for structure)
Sweetener or honey (optional, to taste)
Instructions
Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
Separate egg whites and yolks into two bowls.
Add cream of tartar to whites and beat to stiff peaks.
Blend cottage cheese with yolks until smooth. Mix in salt or sweetener, if using.
Gently fold egg whites into yolk mixture in thirds.
Spoon 6–8 rounds onto the baking sheet.
Bake for 25–30 minutes, or until golden brown.
Cool fully before removing from tray.
