Ingredients
300g ladyfinger biscuits
500g mascarpone cheese
4 fresh eggs (or pasteurized)
120g sugar
250ml strong espresso (or decaf coffee)
1 tsp vanilla extract
Agar-agar or fish gelatin (optional, for extra firmness)
Unsweetened cocoa powder for dusting
Instructions
Brew and cool the espresso.
Separate egg yolks and whites.
Whisk egg yolks with sugar until creamy.
Blend in mascarpone cheese and vanilla extract.
Whip egg whites until stiff peaks form and fold into the mascarpone mixture.
Briefly dip ladyfingers in cooled espresso.
Layer soaked ladyfingers and cream in a dish, alternating.
Finish with a layer of cream and dust with cocoa powder.
Chill for at least 6 hours or overnight.
Serve cold and enjoy.
