- 1 cup orzo pasta
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter (or vegan butter)
- 3β4 cloves garlic, minced
- 1 bunch asparagus, trimmed and chopped
- 2 cups vegetable broth
- Zest of 1 lemon
- Salt and pepper to taste
- (Optional: ΒΌ cup Parmesan cheese, chili flakes, chopped parsley)
Instructions
- Heat olive oil and butter in a skillet; sautΓ© garlic and asparagus for 2β3 mins.
- Stir in orzo and toast for 1β2 mins.
- Add vegetable broth, simmer uncovered, stirring often, for 8β10 mins until creamy.
- Add lemon zest, salt, pepper, and optional Parmesan. Stir, taste, and serve hot.
