For the Shrimp:
- 1 lb large shrimp, peeled and deveined
- 2 tbsp unsalted butter
- 6 garlic cloves, minced
- Zest and juice of 1 lemon
- 1 cup chicken broth (or seafood broth)
For the Sauce & Filling:
- 4 tbsp butter
- 1 cup heavy cream or half-and-half
- 1 ½ cups ricotta cheese
- ½ cup grated Parmesan cheese
- 1 ½ cups shredded mozzarella
- 1 tsp Italian seasoning
- Salt and pepper to taste
Other:
- 9 lasagna noodles, cooked or oven-ready
- Fresh parsley (for garnish)
Instructions
- Sauté garlic in butter, then cook shrimp until pink; deglaze with lemon juice and broth.
- In a saucepan, melt butter and add cream. Stir in ricotta, Parmesan, and seasonings until smooth.
- Preheat oven to 375°F.
- In a 9×13” dish, layer sauce, noodles, shrimp, mozzarella, and repeat for 3 layers.
- Top with cheese and bake covered for 25 minutes.
- Uncover and bake 10–15 minutes more until golden and bubbly.
- Let rest 10 minutes. Garnish with parsley and serve.
