Ingredients

For the Avocado Corn Salsa:
2 ripe avocados, diced
1 cup grilled or fresh corn kernels
1/4 cup red onion, finely chopped
1/2 cup cherry tomatoes, halved
1/4 cup cilantro, chopped
Juice of 1 lime
Salt and pepper
For the Creamy Sauce:
1/2 cup Greek yogurt or dairy-free yogurt
1 tablespoon lime juice
1 tablespoon olive oil
1 clove garlic, minced
Salt to taste
For the Base:
Cooked rice (white, brown, or cauliflower rice)

Sliced jalapeรฑos
Fresh cilantro

Instructions
Marinate shrimp with olive oil, garlic, paprika, cumin, chili, salt, and pepper.
Grill shrimp for 2โ3 minutes per side until fully cooked.
Prepare the salsa by mixing avocado, corn, onion, tomatoes, cilantro, lime juice, salt, and pepper.
Whisk the sauce ingredients until smooth.
Assemble the bowl: add rice, top with grilled shrimp, spoon over salsa, drizzle with sauce, and finish with toppings.
Serve immediately.
