- Lemon juice (optional)
For the Caesar Dressing:
- ½ cup Greek yogurt or dairy-free yogurt
- 1 tsp Dijon mustard
- 1 tbsp lemon juice
- 1 garlic clove, minced
- 2 tbsp grated hard cheese or nutritional yeast
- Salt and pepper to taste
For the Wrap:
- 4 large tortillas (whole wheat, gluten-free, or spinach)
- 2 cups chopped romaine lettuce
- ½ cup shredded cheese (or vegan cheese)
- Optional: croutons or toasted chickpeas
Instructions
- Toss shrimp with oil and seasonings, then grill for 2–3 minutes per side until cooked.
- Whisk together all dressing ingredients in a bowl and adjust seasoning.
- Warm tortillas slightly, then layer with dressing, lettuce, grilled shrimp, and toppings.
- Roll up tightly, slice in half, and serve immediately or wrap for later.
