- 1 lb Italian turkey sausage (or beef sausage), casings removed
- ½ onion, diced
- 1 green bell pepper, diced
- 2 cups shredded mozzarella or Italian cheese blend
- 2 cups low-carb marinara sauce (no added sugar)
- 12 slices turkey pepperoni or beef pepperoni
- ½ tsp dried oregano
- Pinch of garlic powder and red pepper flakes
- Olive oil or non-stick cooking spray
Instructions
- Preheat oven to 425°F (220°C). Lightly grease 4 oven-safe ramekins or bowls.
- In a skillet, cook sausage, onion, and bell pepper until sausage is browned and veggies are soft. Add oregano, garlic powder, and red pepper flakes.
- Layer ramekins with a spoonful of marinara sauce, then meat mixture. Add another layer of sauce, then cheese, and top with pepperoni slices.
- Bake for 12–18 minutes until cheese is bubbly and golden. Let cool for 5 minutes before serving.
