For the Meatloaf:

  • lb ground beef (or turkey/chicken)
  • 1 egg
  • ½ cup breadcrumbs (or gluten-free option)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tbsp ketchup or tomato paste
  • 1 tsp mustard (optional)

For the Mac and Cheese Filling:

  • 2 cups cooked elbow macaroni
  • 1½ cups shredded cheddar (or cheese of choice)
  • 2 tbsp butter
  • ¼ cup milk
  • Salt and pepper to taste

Instructions

  1. Prepare the mac and cheese in a saucepan. Stir until thick, then let cool and chill.
  2. In a bowl, combine meatloaf ingredients and mix until just combined.
  3. On a baking tray, shape half the meat into a base. Spoon chilled mac and cheese in the center.
  4. Cover with remaining meat, sealing edges well.
  5. Bake at 375°F (190°C) for 45–55 minutes or until the internal temp reaches 160°F.
  6. Let rest for 10 minutes before slicing and serving.
