For the Meatloaf:
- 1½ lb ground beef (or turkey/chicken)
- 1 egg
- ½ cup breadcrumbs (or gluten-free option)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- 1 tsp garlic powder
- 1 tbsp ketchup or tomato paste
- 1 tsp mustard (optional)
For the Mac and Cheese Filling:
- 2 cups cooked elbow macaroni
- 1½ cups shredded cheddar (or cheese of choice)
- 2 tbsp butter
- ¼ cup milk
- Salt and pepper to taste
Instructions
- Prepare the mac and cheese in a saucepan. Stir until thick, then let cool and chill.
- In a bowl, combine meatloaf ingredients and mix until just combined.
- On a baking tray, shape half the meat into a base. Spoon chilled mac and cheese in the center.
- Cover with remaining meat, sealing edges well.
- Bake at 375°F (190°C) for 45–55 minutes or until the internal temp reaches 160°F.
- Let rest for 10 minutes before slicing and serving.
