✔ 2 cups butter beans (cooked or canned, drained & rinsed)
✔ ½ cup sun-dried tomatoes (chopped, oil-packed preferred)
✔ 1 ½ cups heavy cream (or coconut cream for dairy-free)
✔ ½ cup grated Parmesan cheese (or nutritional yeast for vegan)
✔ 1 small onion (finely chopped)
✔ 3 cloves garlic (minced)
✔ 1 tbsp olive oil
✔ 1 tsp red pepper flakes (adjust to taste)
✔ 1 tsp dried oregano
✔ ½ tsp dried thyme
✔ Salt & black pepper (to taste)
✔ ½ cup vegetable broth (or chicken broth)
✔ Fresh basil (for garnish)
Instructions
1️⃣ Sauté Aromatics: Heat olive oil in a skillet. Add onions and garlic, cooking until fragrant.
2️⃣ Add Sun-Dried Tomatoes & Spices: Stir in sun-dried tomatoes, red pepper flakes, oregano, and thyme. Cook for a minute.
3️⃣ Pour in Broth & Cream: Add vegetable broth and heavy cream. Let simmer for 5 minutes.
4️⃣ Incorporate Butter Beans: Stir in butter beans and let them soak up the flavors. Simmer for another 5 minutes.
5️⃣ Finish with Parmesan & Garnish: Stir in Parmesan cheese, season with salt and black pepper, and garnish with fresh basil.
6️⃣ Serve & Enjoy! Pair with bread, grains, or a fresh salad.
