  • 4 boneless, skinless chicken breasts
  • 3 tbsp olive oil (divided)
  • Salt & pepper to taste
  • 2 cloves garlic, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp red pepper flakes (optional)
  • ¾ cup low-sodium chicken broth
  • ½ cup chopped sun-dried tomatoes
  • ½ cup heavy cream
  • ¼ cup grated Parmesan
  • 250g pasta (penne, fettuccine, or rigatoni)
  • Fresh basil, for garnish

Instructions

  1. Sear Chicken: Season chicken, sear in hot skillet until golden, remove and set aside.
  2. Make Sauce: Sauté garlic, thyme, and chili flakes. Add broth, cream, sun-dried tomatoes, Parmesan—simmer to reduce.
  3. Bake Chicken: Return chicken to skillet and bake at 375°F for 10–12 mins.
  4. Cook Pasta: While baking, boil pasta to al dente.
  5. Combine: Toss cooked pasta into the sauce, slice chicken, and serve with basil and extra cheese.
