- 4 boneless, skinless chicken breasts
- 3 tbsp olive oil (divided)
- Salt & pepper to taste
- 2 cloves garlic, finely chopped
- 1 tbsp fresh thyme leaves
- 1 tsp red pepper flakes (optional)
- ¾ cup low-sodium chicken broth
- ½ cup chopped sun-dried tomatoes
- ½ cup heavy cream
- ¼ cup grated Parmesan
- 250g pasta (penne, fettuccine, or rigatoni)
- Fresh basil, for garnish
Instructions
- Sear Chicken: Season chicken, sear in hot skillet until golden, remove and set aside.
- Make Sauce: Sauté garlic, thyme, and chili flakes. Add broth, cream, sun-dried tomatoes, Parmesan—simmer to reduce.
- Bake Chicken: Return chicken to skillet and bake at 375°F for 10–12 mins.
- Cook Pasta: While baking, boil pasta to al dente.
- Combine: Toss cooked pasta into the sauce, slice chicken, and serve with basil and extra cheese.
