Main Ingredients:

  • 2 large chicken breasts, cut into bite-sized chunks
  • 1 cup shredded mozzarella or mozzarella cubes
  • ½ cup ranch dressing (gluten-free if needed)
  • 1 cup seasoned breadcrumbs (or gluten-free alternative)
  • 1 large egg, beaten (optional, for extra coating)
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste

Optional Toppings & Dips:

  • Extra ranch for dipping
  • Garlic yogurt sauce
  • Avocado-lime dip
  • Spicy mayo

Instructions

  1. Preheat oven to 400°F (or air fryer to 375°F).
  2. Cut chicken into cubes. Stuff each with a small cube of mozzarella.
  3. Dip chicken pieces in ranch dressing (and egg if using), then coat in seasoned breadcrumbs.
  4. Place on a parchment-lined baking tray or air fryer basket.
  5. Bake for 18–20 minutes (or air fry for 12–14 minutes), flipping halfway, until golden and cooked through.
  6. Serve hot with your favorite dipping sauces.
