Main Ingredients:
- 2 large chicken breasts, cut into bite-sized chunks
- 1 cup shredded mozzarella or mozzarella cubes
- ½ cup ranch dressing (gluten-free if needed)
- 1 cup seasoned breadcrumbs (or gluten-free alternative)
- 1 large egg, beaten (optional, for extra coating)
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and pepper to taste

Instructions
- Preheat oven to 400°F (or air fryer to 375°F).
- Cut chicken into cubes. Stuff each with a small cube of mozzarella.
- Dip chicken pieces in ranch dressing (and egg if using), then coat in seasoned breadcrumbs.
- Place on a parchment-lined baking tray or air fryer basket.
- Bake for 18–20 minutes (or air fry for 12–14 minutes), flipping halfway, until golden and cooked through.
- Serve hot with your favorite dipping sauces.
