1 lb cooked shrimp, peeled and deveined
2 cups tomato juice (or fresh purΓ©e)
1/3 cup ketchup (halal-certified, no alcohol)
1/4 cup freshly squeezed lime juice
1 small red onion, finely diced
1 cucumber, peeled and diced
1β2 ripe avocados, diced
1β2 tomatoes, diced
1β2 jalapeΓ±os or bell peppers (for milder version), finely chopped
1/2 cup fresh chopped cilantro
Salt and pepper to taste
Optional Add-Ins/Substitutes:
Hearts of palm or chickpeas (vegan version)
Bell peppers instead of jalapeΓ±os (mild)
Mango, corn, pickled onion for variation
Instructions
- Cook and cool shrimp if using raw.
- In a mixing bowl, combine tomato juice, ketchup, and lime juice.
- Add chopped onion, tomato, cucumber, pepper, and cilantro. Mix gently.
- Fold in shrimp and avocado last to keep them intact.
- Season to taste and chill for 30 minutes.
- Serve in glasses or bowls with lime wedges, crackers, or tortilla chips.
