- 1 bunch fresh asparagus, trimmed
- ⅓ cup crumbled feta cheese (halal-certified or vegetarian)
- ¼ cup shelled pistachios, toasted and chopped
- 2 tbsp extra-virgin olive oil
- 1 tbsp lemon juice
- 1 tsp lemon zest
- Salt and black pepper, to taste
- Fresh mint or parsley (optional, for garnish)
Instructions
- Wash and trim the asparagus. Blanch or steam for 2–3 minutes until bright green and crisp-tender.
- Toast pistachios in a dry skillet, then chop roughly.
- Arrange asparagus on a serving platter.
- Drizzle with olive oil and lemon juice.
- Top with feta, pistachios, lemon zest, salt, pepper, and herbs if using.
- Serve immediately or at room temperature.
