Instructions

  1. Wash and trim the asparagus. Blanch or steam for 2–3 minutes until bright green and crisp-tender.
  2. Toast pistachios in a dry skillet, then chop roughly.
  3. Arrange asparagus on a serving platter.
  4. Drizzle with olive oil and lemon juice.
  5. Top with feta, pistachios, lemon zest, salt, pepper, and herbs if using.
  6. Serve immediately or at room temperature.
