For the Red Velvet Brownie Layer:

  • ½ cup unsalted butter, melted
  • 1 oz semi-sweet baking chocolate, melted
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • ¼ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ tsp salt

For the Cheesecake Swirl:

  • 8 oz cream cheese (full-fat), softened
  • ¼ cup granulated sugar
  • 1 egg yolk
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine butter, melted chocolate, sugars, eggs, vanilla, and red food coloring. Mix well.
  3. Add cocoa powder, flour, and salt; stir until just combined.
  4. Spread most of the brownie batter in the pan, saving a few spoonfuls for topping.
  5. Beat cream cheese, sugar, egg yolk, and vanilla until smooth. Dollop over brownie batter.
  6. Add remaining brownie batter in spoonfuls. Swirl gently with a knife in figure-eights.
  7. Bake for 28–32 minutes, until the edges are set and the center slightly jiggles.
  8. Cool completely, then chill before slicing for clean layers.
