Ingredients
1 lb fresh asparagus, trimmed
1 cup cherry tomatoes, halved
1 cup fresh mozzarella balls (bocconcini)
2 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper to taste
2 tbsp balsamic glaze
Fresh basil leaves, for garnish
Instructions
Preheat oven to 400°F (200°C).
Arrange asparagus on a baking sheet, drizzle with olive oil, and season with salt, pepper, and Italian seasoning.
Add cherry tomatoes and roast for 12-15 minutes until asparagus is tender.
Sprinkle mozzarella over the asparagus and return to the oven until cheese melts slightly.
Drizzle with balsamic glaze and garnish with fresh basil.
Serve immediately and enjoy!
