Ingredients
1 whole chicken (about 3–4 lbs)
1 cup light soy sauce
Β½ cup dark soy sauce
ΒΌ cup sugar
5 slices ginger
3 cloves garlic (smashed)
2 stalks green onions (cut into thirds)
2 pieces star anise
1 stick cinnamon
2 cups water
1 tablespoon sesame oil
Optional: 2 tablespoons oyster sauce for added richness
Instructions
Prepare the Chicken: Rinse and pat dry the chicken. Set aside.
Make the Sauce: In a large pot, combine light soy sauce, dark soy sauce, sugar, ginger, garlic, green onions, star anise, cinnamon, and water. Bring to a boil.
Simmer the Chicken: Carefully lower the chicken into the simmering broth. Cover and let it simmer for 30-40 minutes, turning halfway to ensure even cooking.
Rest the Chicken: Once cooked, remove the chicken and brush with sesame oil to keep the skin moist. Let it rest for 10 minutes before slicing.
Serve: Slice the chicken and drizzle with a bit of the soy sauce broth. Garnish with fresh green onions and serve with steamed rice or noodles.
