Spinach Pasta Salad with Feta and Cranberries

This fresh, sweet-savory spinach pasta salad is tossed with crumbled feta, dried cranberries, and a lemon-olive oil dressing. A halal-friendly, no-mayo, make-ahead favorite!

Ingredients

8 oz bowtie or fusilli pasta (or gluten-free pasta)

3 cups fresh baby spinach

1/2 cup dried cranberries

1/2 cup crumbled halal-certified feta cheese

1/4 cup red onion, thinly sliced

1/4 cup chopped walnuts or pecans

3 tbsp extra virgin olive oil

1 tbsp lemon juice

1/2 tsp garlic powder

Salt and black pepper, to taste

Optional: honey or maple syrup (1/2 tsp), fresh mint or parsley for garnish

Instructions

Cook pasta until al dente. Drain and rinse under cold water.

Wash and dry spinach. Chop if needed.

Whisk together dressing ingredients in a small bowl.

In a large bowl, combine pasta, spinach, cranberries, onion, feta, and nuts.

Pour dressing over salad and toss gently to coat.

Chill for 15 minutes or serve immediately.
