For the Filling:

2 cups fresh or frozen spinach (thawed and drained)

1 small onion, finely chopped

2 garlic cloves, minced

1 tbsp olive oil

½ cup crumbled feta or cottage cheese (or vegan cheese)

Salt and black pepper to taste

Optional: pinch of nutmeg, chopped herbs (dill, mint, parsley)

For the Pastry:

1 sheet puff pastry or filo dough (gluten-free if needed)

1 egg for egg wash (or plant milk for vegan option)

Optional: sesame seeds or za’atar for topping

Instructions

Prepare the filling by sautéing garlic and onion in olive oil, then adding spinach. Cook until moisture evaporates. Mix in cheese and seasonings.

Roll out pastry and cut into squares or rectangles.

Add filling to the center of each piece, fold, and seal the edges with water or egg wash.

Brush tops with egg wash or plant milk. Sprinkle toppings if desired.

Bake at 400°F (200°C) for 20–25 minutes until golden and crispy.
