  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 2/3 cup milk (or dairy-free alternative)
  • 3 cups fresh strawberries, sliced
  • 3 tablespoons sugar (for macerating strawberries)
  • 1 cup heavy cream (or coconut cream), chilled
  • 1 teaspoon vanilla extract
  • Optional: lemon or orange zest, chopped mint or basil for variations

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. Cut in butter until crumbly. Add milk gradually to form a dough.
  4. Drop or shape dough into rounds and bake for 15–18 minutes until golden.
  5. Toss sliced strawberries with sugar. Let sit for 20–30 minutes to release juices.
  6. Whip cold cream and vanilla extract until soft peaks form.
  7. Slice shortcakes horizontally.
  8. Layer bottom halves with strawberries and cream.
  9. Top with the remaining shortcake halves, more berries, and a final dollop of cream.
