- 6–8 ripe tomatoes, sliced and drained
- 1 pre-baked pie crust (homemade or store-bought)
- 1 cup shredded cheddar cheese (or cheese alternative)
- ½ cup shredded mozzarella
- ½ cup mayonnaise (or vegan mayo)
- 1 tbsp fresh basil, chopped
- 1 tbsp fresh oregano, chopped
- Salt and pepper to taste
- Optional: thinly sliced onion, roasted garlic
Instructions
- Preheat oven to 350°F (175°C).
- Blind bake crust for 10–12 minutes, set aside.
- Slice and drain tomatoes on paper towels to remove excess moisture.
- Layer tomatoes and herbs in crust.
- Mix cheddar, mozzarella, and mayonnaise in a bowl.
- Spread cheese mixture evenly over tomatoes.
- Bake for 30–35 minutes, until golden and bubbling.
- Cool slightly before slicing and serving.
