- 2 large eggs
- ½ cup plain yogurt or sour cream
- ⅓ cup vegetable oil or melted butter
- ½ cup sugar
- 1 tbsp vanilla extract
- ¼ cup milk (dairy or plant-based)
Instructions
- Preheat oven to 350°F (175°C); grease and line an 8-inch pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk eggs and sugar until pale; add yogurt, oil, vanilla, and milk.
- Fold dry ingredients into wet until just combined.
- Pour into the prepared pan and bake for 30–35 minutes.
- Cool slightly before slicing and serving.
