2 tbsp honey (or maple syrup/date syrup for vegan)

12 tbsp extra virgin olive oil

Pinch of kosher salt

Instructions

Prepare the dressing: Whisk together lime juice, honey, olive oil, and salt. Set aside.

Chop the ingredients: Cube watermelon and cucumber, and place in a large bowl.

Add herbs: Gently mix in chopped mint and basil.

Toss with dressing: Drizzle dressing just before serving and toss lightly.
