Ingredients
Salad Base:
2 cups watermelon, cubed
1 English cucumber, chopped
½ cup feta cheese, crumbled (or vegan feta)
10–15 fresh mint leaves, chopped
5–10 basil leaves, torn (optional)
Honey-Lime Dressing:
2 tbsp fresh lime juice
2 tbsp honey (or maple syrup/date syrup for vegan)
1–2 tbsp extra virgin olive oil
Pinch of kosher salt
Instructions
Prepare the dressing: Whisk together lime juice, honey, olive oil, and salt. Set aside.
Chop the ingredients: Cube watermelon and cucumber, and place in a large bowl.
Add herbs: Gently mix in chopped mint and basil.
Toss with dressing: Drizzle dressing just before serving and toss lightly.
Finish with feta: Crumble feta on top and garnish with extra herbs if desired.
